Tuna Salad Rice Bowl

Because we know how much Mike likes a can of tuna on top of some rice.

INGREDIENTS

  • 120g cooked rice

  • 185g tin tuna

  • 20g light mayo

  • 1 tsp wholegrain mustard

  • 1/2 spring onion, finely sliced

  • 2 leaves of romaine lettuce, sliced

  • 1 tbsp kimchi or sauerkraut

  • 1 packet seaweed snacks, cut into match sticks

METHOD

  1. Reheat rice in the microwave.

  2. In a small bowl, combine the tuna, mayo, mustard, and spring onion. Stir together well. 

  3. Place rice in a bowl and top with tuna mixture, lettuce & kimchi.

  4. Scatter the seaweed over the top. 

  5. Mix and enjoy!

If a rice bowl isn’t your thing, you can make the tuna salad and spread over crackers or some toasted ciabatta instead.
