Tuna Salad Rice Bowl
Because we know how much Mike likes a can of tuna on top of some rice.
INGREDIENTS
120g cooked rice
185g tin tuna
20g light mayo
1 tsp wholegrain mustard
1/2 spring onion, finely sliced
2 leaves of romaine lettuce, sliced
1 tbsp kimchi or sauerkraut
1 packet seaweed snacks, cut into match sticks
METHOD
Reheat rice in the microwave.
In a small bowl, combine the tuna, mayo, mustard, and spring onion. Stir together well.
Place rice in a bowl and top with tuna mixture, lettuce & kimchi.
Scatter the seaweed over the top.
Mix and enjoy!
If a rice bowl isn’t your thing, you can make the tuna salad and spread over crackers or some toasted ciabatta instead.
