Cafe Mocha Oatmeal

Now as a self proclaimed coffee snob, I never thought I would be using instant coffee in a recipe.

However, this one struck all the flavour notes. And for only 550 calories, it tasted too good to be true!

Decadent, sweet, tangy from the yoghurt to cut through the richness. A match made in heaven.

Even if you’re not a coffee fan, I would definitely give this one a try.

INGREDIENTS:

  • 50g oats

  • 1 serve protein powder (I used vanilla whey, just so it didn’t become too chocolatey, but you’re more than welcome to try)

  • 7g cocoa powder

  • 1x 99% sugar free Avalanche coffee sachet

  • 1 tsp instant coffee

  • 1 bobby banana, sliced

  • 10g dark chocolate, chopped/grated

  • 50g natural protein yoghurt

  • 35mls sugar free maple syrup

  • Pinch of salt

  • Pinch of cinnamon

METHOD

  1. Place the oats, coffee sachet, instant coffee, cocoa powder, and salt into a microwave proof bowl. Mix to combine and add 200mls water to the bowl. Give it a quick stir then place into the microwave for 1min.

  2. After the minute, stir, and microwave again for another minute. Repeat this process in 30-45sec intervals until you get a thick consistency (as pictured above. I cooked them for a total of 3.5-4minutes).

  3. Once cooked, allow to sit for 5-10 minutes while the oats cool. Once they’ve cooled slightly, mix in the protein powder and half of the maple syrup.

  4. Top with the banana, yoghurt, & chopped chocolate then sprinkle over cinnamon and the remaining maple syrup to serve.
