Go-To Overnight Oats

Oats by far are my favourite breakfast food, and after 15 years of eating them (almost daily) I still don’t get bored.

I know we all want the “quick” recipes but sometimes spending a little extra time cooking and preparing the meal is just worth it for the results.

Here’s my current go-to overnight oats recipe while showing how we can make the most out of the fiber content.

The trick comes from cooking them, developing the starch, and then allowing them to cool off in the fridge overnight. It takes a little longer than traditional overnight oats, but trust me, it’s worth it!

INGREDIENTS:

  • 60g oats

  • 1 serve vanilla protein powder

  • 20g dark chocolate, chopped

  • 100g blueberries

  • 35mls sugar free maple syrup

  • Pinch of salt

  • ½ tsp of cinnamon

METHOD

  1. Place the oats and salt into a microwave proof bowl, or Tupperware container, with 200-240mls of water. I like to use a 1:3-1:4 oats to water ratio when cooking - yes it makes a difference.

  2. Give it a quick stir then place into the microwave for 1min.

  3. After the minute, stir, and microwave again for another minute. Repeat this process in 30-45sec intervals until you get a thick consistency (as pictured above. You should be able to notice the starch starting to form when you mix it).

    Hint: don’t skip on the stirring. Stir for a good 30-45sec in-between heating bouts.

  4. Once cooked, allow to sit for 2-5 minutes. Once slightly cooled mix in the protein powder.

  5. Here’s your blank canvas. Essentially you can top the oats with anything of your choice but I dust over the cinnamon, drizzle over the maple syrup, and then top with the blueberries and dark chocolate.

  6. Cover, and place it into the fridge overnight to help the resistance starch develop.
