Don’t knock it until you try it. Perfect for those who don’t like protein powder! If you want to make it under 500 calories, simply remove the milk and replace with water or unsweetened almond milk.

INGREDIENTS

  • 50g rolled oats

  • 150mls light milk

  • 250mls egg whites

  • 70g frozen berries

  • 15g peanut butter

  • 5g sliced almonds

  • 35mls sugar free maple syrup

METHOD

  1. Place oats into a saucepan with milk and a pinch of salt. Heat over medium and bring to the boil. Reduce the heat to low and stir until your desired porridge consistency is reached. I tend to go more on the dry side as the egg whites will add more liquid as we continue to cook.

  2. Remove oats from the heat and mix through the sugar-free syrup. Then, place the berries in a microwave safe bowl and heat for 30-60 seconds.

  3. Start adding the egg whites to the oats little by little (like when making risotto), and with a whisk, continuously mix as you go. Whisk hard and do NOT stop (otherwise you’ll get scrambled egg whites, haha). First they’ll become quite frothy, you’re half way there, keeping whisking until you reach an airy, smooth consistency (around 3-5 minutes).

  4. Place oats into a serving or meal prep bowl, then top with peanut butter, berries, sliced almonds.
