High Protein Cinnamon Buns

Fuelled by my craving for cinnamon buns, inspired by @ajfoodie; try out these high protein cinnamon buns all for under 500 calories per serve!

INGREDIENTS:

BUNS

  • 180g flour

  • 360g protein yogurt

  • 3 whole eggs

  • 1 tbsp sweetener of choice

  • 1.5 tsp baking powder

  • 1.5 tsp baking soda

  • 1 tbsp brown sugar

  • 1 tsp cinnamon

WHEY DRIP

  • 30g vanilla protein powder

  • 1/4 tsp cinnamon

PEANUT BUTTER DRIZZLE

  • 50g powdered peanut butter

METHOD

  1. Pre-heat oven on bake to 170 degrees.

  2. In a bowl, mix all the bun ingredients together, except the brown sugar and cinnamon.

  3. Spray an oven proof dish, and spoon in the bun mixture. I aimed for 9 “buns”. Once divided, sprinkle the brown sugar and cinnamon over the top.

  4. Place into the oven and bake for 20mins.

  5. While the buns are cooking, prepare the drizzle sauces. For the whey drip mix the protein powder and cinnamon with 30-50mls water. Add slowly and mix as you go. You’re looking for a “glaze” consistency. It should drip off a spoon. Repeat for the peanut butter. Place into the fridge to keep cool.

  6. Once the buns have finished cooking, remove from the oven and let stand for 5-10mins. Portion into seperate bowls and drizzle over the whey drip and peanut butter mixture.

Note: It’s not necessary, but I did add a serve of sugar free maple syrup when eating. For the extra 30 calories, it was worth it!
