Bulgogi, which translates to “fire meat”, is a popular Korean dish of thinly sliced marinated meat which is normally grilled or stir fried.

We are going to simplify things a little by cooking it in the oven making it easy to prepare in bulk.

We finished it in the fry pan to help thick up the sauce and add some char but this step is totally optional.

You can also swap the chicken for any protein of your choice.

INGREDIENTS

  • 300g chicken breast, thinly sliced

  • 1/2 apple OR pear, grated

  • 1 brown onion, 1/2 grated, 1/2 thinly sliced

  • 2 Tbsp soy sauce

  • 2 Tbsp mirin

  • 1 tsp ginger/garlic paste

  • 1 tsp brown sugar

  • 2 tsp sesame oil

  • 250g cooked rice

  • 1 spring onion, thinly sliced

METHOD

  1. In an oven proof dish, add the chicken, grated onion, apple, soy sauce, mirin, sugar, ginger/garlic paste, and sesame oil. Mix well and let sit in the fridge to marinade for at least 30mins.

  2. Meanwhile, preheat the oven to 200 degrees. After 30mins remove chicken from the fridge and mix through the sliced onion. Place into the oven to bake/grill for 20-25mins or until chicken is cooked through.

  3. To make a thicker sauce, place a large pan over high heat. Add all the contents from the oven dish into the pan and cook for 3-5mins until sauce thickens.

  4. Serve over the cooked rice and garnish with thinly sliced spring onion.

Note: Pair with a side of kimchi and our cucumber salad for extra veg.
