Lemon & Blueberry Protein Buns

Picking blueberries is an annual summer outing so I thought I’d put the extras that I had frozen to good use in these blueberry muffin inspired protein “buns”.

It was the same base recipe as the cinnamon buns we’ve previously done just with a fresh summer twist.

I actually enjoyed this one more. Just saying.

INGREDIENTS:

BUNS

  • 180g flour

  • 1.5 tsp baking powder

  • 1/2 tsp baking soda

  • 360g protein yoghurt

  • 3 whole eggs

  • 1 tbsp vanilla essence

  • 30mls sugar free maple syrup

  • 1/2 lemon, juice and zest

  • 150g frozen blueberries

  • 2 tsp brown sugar

TOPPINGS

  • 30mls sugar free maple syrup

  • Zest from half a lemon

  • Whey drip

    • 30g vanilla protein powder

    • 1 tbsp lemon juice

METHOD

  1. Pre-heat oven on bake to 160-170 degrees.

  2. In one bowl whisk the wet bun ingredients (yoghurt, eggs, vanilla, maple syrup, and lemon juice/zest) together.

  3. Add dry bun ingredients (flour, baking soda, and baking powder) to seperate bowl and mix to combine.

  4. Mix the wet ingredients and dry ingredients together to create a batter. Add to the mixture into the fridge while you prepare the berries.

  5. Place berries into a microwave proof bowl and heat for 1min. Gently mash to release some of the blueberry’s natural juice. You still want the berries whole.

  6. Remove the batter from the fridge. Using a spoon, divide the mixture into an oven proof baking dish. I aimed for 9 “buns”. Once divided, sprinkle the brown sugar over the top.

  7. Place into the oven and bake for 20-30mins.

  8. While the buns are cooking, prepare the whey drip. Mix the protein powder with 50-100mls water. Add slowly and mix as you go. You’re looking for a “glaze” consistency. It should drip off a spoon. Add the lemon juice then place into the fridge to keep cool.

  9. Once the buns have finished cooking, remove from the oven and let stand for 5-10mins. Portion into seperate bowls and drizzle over the remaining maple syrup, whey drip, and lemon zest to serve.
