Teriyaki Beef & Broccoli

Beef & broccoli - the real dynamic duo.

Quick & easy. A perfect weeknight meal to add into your rotation.

You can also make the sauce in a big batch and store in the fridge for later. Just ensure you follow the same ratios.

INGREDIENTS:

  • 100g short grain (sushi) rice

  • 300g 5% fat beef mince

  • 100g broccoli, cut or frozen florets

  • 10g oil (olive or sesame oil)

  • 1 spring onion, sliced (keep the white and green parts seperate)

  • thumb sized piece of ginger, grated

  • 1 tsp dark soy sauce

Teriyaki Sauce:

  • 1 tbsp soy sauce

  • ½ tbsp sake

  • ½ tbsp mirin

  • 1 tsp sugar

METHOD

  1. Place all sauce ingredients into a small pot. Bring to the boil, mixing occasionally, then lower the heat and reduce by about half. Remove from the heat to cool.

  2. Prepare rice as per packet instructions.

  3. Place a seperate pot of water over high heat and add the broccoli. Bring to boil. If using frozen broccoli at this point you can turn the heat off and drain the water. If using fresh broccoli continue to boil for a further 3-4 minutes before draining.

  4. Mix the beef, white part of the spring onion, ginger, and dark soy together. Then place a pan over medium-high heat with the oil and add the beef.

  5. Spread evenly throughout the pan, season with salt and pepper, and let it cook for 3-5minutes on one side. Flip, then start breaking up the mince. Continue to cook for a further 3-5 minutes or until the mince is fully cooked and crispy.

  6. Divide the rice, beef, and broccoli between bowls. Drizzle over the teriyaki sauce, and top with the green parts of the spring onion.
