ANZAC Protein Oats

Fitting with the long weekend, here’s a little ANZAC inspired protein oats.

INGREDIENTS:

  • 50g oats

  • 180mls unsweetened coconut milk

  • 1 serve vanilla whey protein

  • 5g shredded coconut

  • 20g ANZAC biscuits, crushed

  • 2 feijoas

  • 35mls sugar free maple syrup

  • Pinch of ground cinnamon

  • Pinch of ground ginger

  • Pinch of salt

METHOD

  1. Place oats, coconut, spices, coconut milk and a pinch of salt into a microwave proof bowl. Heat for 1min the remove and stir. Continue cooking in 30sec bouts until oats are creamy.

    Note: you want the oats slightly on the dry side for when you add the protein.

  2. Once cooked, allow to sit for two minutes to slightly cool. Then mix through the protein powder.

  3. Finally sprinkle over the crushed ANZAC biscuit, scoop on the feijoas and drizzle over the sugar free maple syrup.

    Note: you can swap the maple syrup for golden syrup if you want to be traditional but it will add an extra 50-80 calories.
