Prosciutto, Peach, & Mozzarella
A harmony of flavours.
INGREDIENTS
- 200g mozzarella, broken into pieces 
- 80g prosciutto 
- 2 cups of rocket 
- 2 stone fruit, sliced 
- ¼ red onion, sliced 
- 1 tomato, sliced 
- ¼ c parsley, diced 
- 1 Tbsp olive oil 
- 1 Tbsp balsamic vinegar 
- Salt & pepper, to taste 
METHOD
- Prepare salad ingredients. 
- In a small bowl, mix olive oil with balsamic vinegar. 
- Assemble the salad by dividing the ingredients between two serving bowls. Dress with the balsamic dressing. Season with salt and pepper.
