Lemon & Blueberry Protein Oats

Probably my favourite combo at the moment. I loved last week’s recipe so much I adapted the same flavours into protein oats!

The added chia seeds to the blueberries helped to increase the fibre (10g per serving), and made them into a jam like consistency.

Really good cooked hot but eaten cold!

INGREDIENTS:

  • 50g oats

  • 150mls lite milk

  • 30g vanilla protein powder

  • 5g chia seeds

  • 70g frozen blueberries

  • 30mls sugar free maple syrup

  • 1tsp brown sugar

  • 1/2 lemon - juice and zest

METHOD

  1. In a microwave proof bowl, add the blue berries and heat for 45-60sec. Mash and continue to heat in 20-30sec increments until berries become completely soft. Mash again squeezing out all the juices then mix through the chia seeds. Place in the fridge to cool.

  2. Place oats into a small pot along with the milk, 100mls water, and a pinch of salt (optional). Place over medium heat and bring to boil, stirring often. Once at the boil, reduce heat and continuously stir until your desired texture is achieved. Remove from the heat and allow to cool slightly.

  3. Then, mix the 1/2 of the protein powder into the oats. Once the protein powder has completely dissolved, mix in the lemon juice and half of the zest. Once combined, transfer the oats into a serving bowl or meal prep container and top with the brown sugar.

  4. At this point I like to place the oats into the fridge to cool but you can continue with the recipe and eat them hot if you prefer.

  5. Put the other half of the protein powder into a small bowl and mix with 50-70mls of cold water. Continuously stir until the whey turns into a loose paste.

  6. To assemble, top the oats with the whey drip, then the blueberry chia jam, followed by the remaining lemon zest. Drizzle over a serving of sugar free maple syrup and enjoy!
