Protein Charcuterie Dinner

An evening of comfort!

INGREDIENTS

  • 1 serve crispy chicken (Recipe)

  • 100g cottage cheese

  • 100g cucumber mint dip/tzatziki

  • 12 wheaten crackers OR 3 rows rice crackers

  • 70g cheese of choice

  • 80g hummus

  • 200g carrot, cut into sticks sticks

  • 200g celery, cut into sticks

  • 200g pineapple, cubed

METHOD

  1. Prepare chicken as per recipe.

  2. While chicken is cooking, prepare the rest of the ingredients. To make the protein yogurt dip; mix together the cottage cheese and cucumber mint dip in a bowl.

  3. Once chicken has cooked, slice and assemble the board with all ingredients in your own artistic fashion
