Creamy Chicken Gnocchi
An evening of comfort!
INGREDIENTS
250g raw chicken thighs
Salt and pepper
10g butter
2 gloves of garlic
1/2 onion, finely diced
1 Tbsp thyme
200ml chicken stock
70g cream cheese
250g gnocchi
1/2 packet of spinach
METHOD
Lightly season the chicken with salt and pepper. Heat a large pan over medium-high heat, add the butter, and once it’s melted and bubbling, add the chicken. Cook for 5 to 7 minutes until golden and cooked through. Transfer to a plate and set aside.
Reduce the heat to medium and add the diced onion to the same pan. Cook for 2 to 3 minutes until softened, then stir in the garlic and thyme. Cook for another 30 seconds, just until fragrant.
Pour in the chicken stock, scraping up any browned bits from the bottom of the pan. Bring to a simmer.
Add the cream cheese and stir until melted and the sauce is smooth.
Add the gnocchi directly to the sauce and simmer for 3 to 4 minutes, stirring occasionally, until the gnocchi is tender and the sauce has slightly thickened.
Return the chicken to the pan along with the spinach, stirring until the spinach is wilted and everything is heated through. Serve warm.
