Frittata with Feta
An easy protein hit.
INREDIENTS
- 6 whole eggs 
- 125ml milk 
- Salt and pepper, to season 
- 300g kumara, cooked and cut into cubes 
- 100g fat reduced feta, crumbled 
- 2 cups of mixed vegetables - we have used spinach, capsicum, onion and tomato 
METHOD
- Preheat the oven to 180 degrees. Line a loaf pan with baking paper. 
- In a bowl, combine eggs and milk. Whisk together. Then season with salt and pepper. 
- Add vegetables to the loaf pan and then pour over the egg mixture. 
- Bake for 45 minutes or until the top is golden and the egg is cooked through. 
Tip - make holes in the kumara with a fork and cook whole in the microwave with the skin on. When cool, cut into cubes.
