Chicken Cashew
The creamy, crunchy cashews are the hero in this dish.
INGREDIENTS
- 2 Tbsp oil 
- 300g raw chicken breast, sliced 
- 2 cloves of garlic, minced 
- ½ cup cashews 
- 1 cup of shredded cabbage 
- 1 carrot, chopped into pieces 
- 2-3cm ginger, sliced 
Sauce
- 1 Tbsp of each dark soy, light soy, fish sauce, and mirin 
- ½ Tbsp sesame oil 
METHOD
- Combine the sauce ingredients in a small bowl. 
- In a pan, heat half of the oil on a medium high heat. 
- Sear the chicken on both sides and then remove from the pan. The chicken should be about three quarters of the way cooked through. 
- Add the remaining oil to the pan and stir fry ginger and garlic. 
- Then add the vegetables. Stir fry for one to two minutes. 
- Add the chicken back to the pan, stir fry for another minute. 
- Then add the sauce. 
- Reduce the sauce until the chicken is cooked through. 
- Add the cashews and mix through. 
- Garnish with sliced ginger.
