Roasted Eggplant in Tomato Sauce

Quick, tasty, & comforting. One to add to your weeknight rotation.

Roasted eggplant & tomatoes, folded into a spiced mince and tomato gravy.

Topped onto hummus and pairs perfectly with sourdough or crusty bread.

You can also omit the bread and have as pictured to keep the calories under 500.

INGREDIENTS:

  • 300g hummus

  • 100g cherry tomatoes

  • 1 whole eggplant, sliced

  • 250g 5% beef mince

  • 1 small red onion, diced

  • 1 tbsp minced ginger & garlic

  • ½ tsp ground cumin

  • ½ tsp ground coriander

  • ½ tsp smoked paprika

  • ½ tsp chilli flakes

  • 1 tsp dried oregano

  • 1 can (400g) whole peeled tomatoes

  • ½ lemon, juice

  • 15mls olive oil

  • Small bunch of fresh coriander, roughly chopped

  • 150g sourdough (50g per serving), toasted

METHOD

  1. Pre-heat the oven the 200 degrees. In a baking tray add the sliced eggplant and cherry tomatoes. Season with half the oil, half the oregano, and salt and pepper. Bake for 15-20minutes.

  2. While the veg is cooking, place a pan over medium-high heat. Add the remaining oil to the pan alongside the onion and stir fry for 3-4 minutes. Add the ginger and garlic and toss. Cook for a further 1-2 minutes.

  3. Reduce the heat and then the remaining spices and what’s left of the oregano. Mix and cook for a further minute.

  4. Turn the heat back up to high and add the mince. Break a part with a spatular and cook for 2-3 minutes on one side before breaking and mixing again. Add the can of tomatoes and mix through breaking up the tomatoes as you stir.

  5. Fill half the can with water to rinse the remaining tomato juice and add this to the pan too.

  6. Take your veggies out of the oven and add them to the tomato sauce. Mix everything together, season with salt and pepper, and cook for a further 3-5minutes or until sauce has thickened.

  7. Once cooked, turn off the heat and squeeze in the lemon juice and fresh coriander. Mix and set aside.

  8. Spoon the hummus into a bowl making a well in the middle for the eggplant mixure. Top with the eggplant and serve with the bread.
