Chicken Dumplings
Slightly meditative.
INGREDIENTS
- 200g chicken mince 
- 2 spring onions, white ends only, finely diced 
- 1 tsp ginger, minced 
- 2 Tbsp soy sauce 
- ½ tsp sesame oil 
- ¼ tsp salt 
- 14 Dumpling wrappers 
- 1 tsp olive oil 
- ½ cup of water 
- Bok Choy, broken into individual pieces 
- 1 clove garlic, finely diced 
- 1 tsp olive oil 
Dumpling Sauce:
- 2 tsp chilli oil 
- 2 Tbsp soy sauce 
- Handful of chives, diced 
METHOD
1. In a medium bowl, mix the first six ingredients together to create your dumpling filling.
2. Add a teaspoon of filling to each wrapper and fold together. There are many awesome ways to fold dumplings. If you are new to the process or would like to learn a new method, we definitely recommend watching a couple of YouTube videos - very meditative!
3. Heat a pan to a medium heat and add 1 tsp of olive oil. Place the dumplings in the pan and cook until the underside is golden brown (roughly 2-3 minutes).
4. Carefully add the water and cover the pan with a lid. Note – watch as you add the water as the oil can ‘spit’. Leave for about 7 minutes or until the water has evaporated.
5. While your dumplings are cooking, heat another pan to cook the bok choy. Add 1 tsp of olive oil, garlic, and bok choy. Stir fry for 1-2 minutes. Divide between two bowls.
6. Top the bok choy with the dumplings. Dress each bowl with soy sauce, chilli oil, and chives.
