Brussel Sprout, Feta & Chicken
One for the sprout lovers!
INGREDIENTS
- 300g Brussel sprouts, halved 
- 1 Tbsp olive oil 
- 5g sliced almonds, toasted 
- ¼ red onion, finely sliced 
- 60g reduced fat feta, crumbled 
- 1/4 apple, julienned 
- 300g cooked shredded chicken 
- 1 Tbsp olive oil 
- ½ lemon, juice 
METHOD
1. Pre-heat oven to 180 degrees.
2. Add brussel sprouts to a baking tray, drizzle with the first measure of olive oil, and season with salt and pepper. Bake until golden brown (roughly 20 minutes depending on size).
3. While the brussel sprouts are cooking, toast almonds in a small dry pan until golden.
4. To a medium mixing bowl add almonds, onion, apple, feta, chicken, brussel sprouts, the second measure of olive oil and lemon juice. Mix through.
5. Season with salt and pepper. Serve.
