Apple Crumble Protein Oats

Because you can eat the same thing and still make it different. Been loving warm porridge for breakfast or lunch on these colder winter days.

You can always cook the apple up in bulk and save it in the fridge for the rest of the week. It’s about 40g per serving.

INGREDIENTS:

  • 50g oats

  • 150mls light milk

  • 1 serve vanilla whey protein

  • ½ apple (1/4 cubed, ¼ grated)

  • 15g keto granola (I used Vogel’s apple crumble & cinnamon)

  • 50mls sugar free maple syrup

  • 1 tsp ground cinnamon

  • Pinch of salt

METHOD

  1. Place oats, grated apple, a pinch of cinnamon, milk and salt into a microwave proof bowl. Give it a quick stir and then heat in the microwave for 1min. Remove and stir before adding it back in for another minute. Continue cooking in 30sec bouts until oats are cooked.

    Note: you want the oats slightly on the dry side for when you add the protein.

  2. Once cooked, allow to sit for two minutes to slightly cool. Then mix through the protein powder.

  3. To cook the apple, place the cubed apple in a pan over medium-low heat. Cook for 1-2 minutes, toss, then add the cinnamon. Cook for a further 2 minutes to toast the cinnamon. Then add half the maple syrup and ¼ cup of water to the pan. Turn the heat to high and bring to the boil. Toss to make sure everything is combined and then reduce the heat. Once all the water has evaporated take off the heat and add to the oatmeal.

  4. Finally sprinkle over the granola and the remaining maple syrup and enjoy!
