Almond Croissant Protein Oats

Following on from last weeks recipe… Same same, but different.

As a breakfast option, this would be my preference.

Mixing almond butter, maple syrup and protein powder together was a game changer.

INGREDIENTS:

  • 40g oats

  • 150mls light milk (can swap for milk of your choice)

  • 30g vanilla whey protein

  • 20g almond butter

  • 30mls sugar free maple syrup

  • 5g sliced almonds

  • 1/2 tsp icing sugar

METHOD

  1. Place oats and milk into a bowl and heat in the microwave for 60sec.

  2. Stir and heat again for another 30secs. Repeat until oats are cooked. They should be quite thick and on the dryer side. Set aside to cool slightly.

  3. While the oats are cooling, mix half the protein powder, almond butter, and sugar free maple syrup together in a small bowl. If the protein starts clumping, keep stirring and a runny paste should form. Add a splash of water if need be.

  4. Once mixed, add the remaining protein into the oats, mixing well.

  5. Top with the almond butter mixture, then the sliced almonds and a sprinkle of icing sugar.

This I’d be more happy to give the name “almond croissant”.
