Tomato Sausage Pasta
Full of flavour and a budget saver.
INGREDIENTS
- 150g dry weight pasta 
- 4 cloves of garlic, thinly sliced 
- 1 Tbsp olive oil 
- 2 sausages, peeled 
- 125g beef mince 
- 1 tsp smoked paprika 
- Salt and pepper, to taste 
- 200g can of tomatoes 
- 1/2 c basil 
- 1 c baby kale 
METHOD
- Put a pot of water on the boil and salt to taste. Once boiling, add the pasta and cook as per the packet instructions. 
- Heat a pan to a medium high heat. Add oil and garlic, and fry for one minute. 
- Add the sausage and mince, and cook until brown. Add paprika and season with salt and pepper. 
- Add tomatoes and cook for two to three minutes to reduce, before adding the kale and 2-3 T of the cooking water from the pasta. 
- When the pasta is al dente, drain, and add to the pan with an additional 3T of cooking water. Reduce. 
- Top with the chopped basil and season to your liking.
