Sweet Omelette
Down to a fine art - a five-minute morning masterpiece.
INGREDIENTS
- 120g berries 
- 10g butter 
- 3 whole eggs 
- 1/4 tsp vanilla essence 
- A crack of salt 
- 150g plain natural yoghurt 
- Sugar free maple syrup 
METHOD
- To a medium sized pan, add butter and blueberries, and cook until bubbling (or the berries are soft). 
- While these are cooking, whisk the eggs for 2-3 minutes. Then add vanilla essence. 
- Pour over the berries, and cook until the top is firm. Season with salt. 
- Fold, serve, and top with yoghurt and maple syrup.
