Sticky Date Porridge
A warm comforting hug in every spoonful!
INGREDIENTS
- 80g oats 
- 1/8 tsp salt 
- 250ml milk (you may need to alter this depending on the consistency that you enjoy) 
- 4 medjool dates, diced 
- 2 Tbsp boiling water 
- 45g protein powder 
- 2 squares of Lindt 70% dark chocolate, grated 
- 30ml sugar free maple syrup 
- 20g peanut butter 
METHOD
- Place oats and milk in a small pan over a medium heat. 
- Add salt and stir with a wooden spoon. 
- Bring to a steady simmer for 5 minutes, stirring as often as you can to give you a smooth creamy porridge. If desired, adjust the consistency by adding a dash of milk or water. 
- While the oats are cooking, soak two dates in the boiling water and mash with a fork. Just before the oats have finished cooking, stir through the date mix. 
- Leave the mixture to cool slightly before mixing through the protein powder and diving between two bowls. 
- Top with the chocolate, sugar free maple, peanut butter, and remaining dates.
