Sticky Chicken Drumsticks
“It’s finger lickin’, it’s finger lickin’ good, y’all!”
INGREDIENTS
- 6 chicken drumsticks 
- 3/4 tsp baking powder 
- 3/4 tsp salt 
- 2 Tbsp soy sauce 
- 2 Tbsp rice wine vinegar 
- 2 Tbsp stock 
- 1 tsp honey 
- 1 tsp chilli oil 
- 1 Tbsp sesame seeds 
- 2 spring onions, finely sliced 
METHOD
- Preheat oven to 120 degrees fan bake. 
- Using a paper towel, pat the drumsticks dry to remove as much moisture as possible. Add to a bowl. 
- Sprinkle with the baking powder and salt, and mix to combine. This will help to get the skin crunchy. 
- Place on a pre-oiled oven rack and cook for 30 minutes. 
- While the chicken is cooking, mix together the sauce. In a small bowl add soy, vinegar, stock, honey, and chill oil. Set aside. 
- When the chicken has been cooking for 30 minutes, turn the oven up to 200 degrees and cook for a further 45 minutes. 
- Just before the chicken is finished cooking, heat a medium pan and reduce your sauce. Once at the desired, sticky consistency add the chicken and mix well. 
- Serve topped with sesame seeds and spring onions.
