Rotisserie Chicken Salad
You all know how much I like chicken and rice so when I saw the viral chicken in a bag salad on IG, of course I had to give it a try.
The bag toss itself is a bit of a gimmick (probably why it went viral), you don’t save time cleaning up because you still create dishes chopping salad and shredding the chicken. Just mix everything in a large bowl, haha.
None the less, I’m definitely a fan and the whole thing can be bought together in less than 20mins.
Swapping the rice for vermicelli noodles could be a great way to mix it up.
INGREDIENTS:
450g rotisserie chicken, breast meat only, shredded
100g dry weight Jasmine rice (can use a 250g microwave rice pack)
1 cucumber, finely diced
1 capsicum, finely diced
3 whole spring onion, finely sliced
1 large handful of fresh mint
2 tbsp soy sauce
1 tbsp rice vinegar
1 tsp chilli crisp
1 tbsp roasted sesame seeds
METHOD
The rice will take the longest so start with that cooking as per packet instructions. To save time you can use microwave rice instead.
Shred the chicken breast and start preparing all the salad ingredients.
In a large bowl (or the empty chicken bag) add all the ingredients along with any of the remaining juices from the chicken.
Mix well and serve!
Note: Use the left over thigh meat and bones to make this microwave pho!
