Pancakes with Fruit
Not too bad for a protein pancake..
INGREDIENTS
- 250g low fat cottage cheese 
- 2 whole eggs 
- 1/2 tsp vanilla essence 
- 2 Tbsp honey 
- 1/2 tsp baking powder 
- 1/2 cup flour 
- 2 Tbsp neutral cooking oil 
- 200g De Winkle natural yoghurt 
- 1 banana 
- 200g strawberries 
- Sugar-free maple syrup, for serving 
METHOD
- Combine the first six ingredients together, mixing with a whisk after each ingredient added. This is your pancake batter. 
- Heat a medium size pan over a low heat. You will need to cook these in batches so add part of the oil. Divide the mixture and cook until golden or cooked through. 
- Divide the pancakes between two plates and top each portion with yoghurt, fruit, and sugar-free maple syrup.
