Kumara Taco Bowl

The sweet potato bowls have been popping up all over my IG feed so I thought I’d try my hand at making my own.

Definitely one to add into the weeknight rotation and the portions are easy to adjust to fit your calorie needs.

INGREDIENTS:

  • 800g kumara (2× 400g kumara, halved lengthways)

  • Spice mix, ¼ tsp of each spice - salt, pepper, dried oregano, smoked paprika, cinnamon

  • 500g of 5% fat mince

  • 1 sachet fajita/taco seasoning

  • 400g salsa

  • 100g lite cottage cheese

  • 60g edamame cheese, grated

  • Bunch of fresh coriander

  • 1 lime, quartered

  • Cooking spray (olive oil)

METHOD

  1. Preheat oven to 200 degrees C. While the oven is heating up, line an oven tray with baking paper, season the flesh side of the kumara with the spice mix, spray with cooking spray and place flesh side down into the oven tray. Place into the oven and bake for 40-50 minutes, or until the kumara is soft.

  2. In the meantime prepare the mince. Place a pan over high heat and spray pan with cooking spray. Add the mince to the and break up spreading evenly throughout the pan. Allow to cook on one side for 2-3 minutes to get a char. Add the fajita/taco seasoning over the top and stir to combine while breaking up the mince. Cover with a lid and cook for 5 minutes.

  3. Once the kumara has cooked, place one half into a bowl and and mash the kumara flesh. Sprinkle over 7g of cheese, then top with a quarter of the mince, salsa, and cottage cheese. Sprinkle the remaining 8g cheese over the top and garnish with coriander and the juice from a lime wedge.
