Jollof Rice with Beef
A West African classic known for its rich flavours and vibrant colors.
INGREDIENTS
- 300g beef steak, thinly sliced 
- 1 tsp curry powder 
- Salt & pepper, to taste 
- 1 Tbsp olive oil 
- 1 capsicum, deseeded 
- 3 large tomatoes, roughly chopped 
- 2-3 jalapenos 
- 1 white onion, 1/2 roughly chopped and 1/2 sliced (separate) 
- 1/4 cup of water 
- 1 Tbsp olive oil 
- 2 Tbsp tomato paste 
- 3 cloves garlic, sliced 
- 1/2 Tbsp ginger, minced 
- 1/2 Tbsp curry powder 
- 1/2 Tbsp thyme 
- 1/2 tsp salt 
- 1 cup stock 
- 100g dry weight rice 
METHOD
- Season the thinly sliced beef steak with 1 tsp curry powder, salt, and pepper. 
- Heat 1 Tbsp olive oil in a large pan over high heat. Add the beef and sear quickly until just browned, then remove from the pan and set aside. 
- In the same pan, add another 1 Tbsp of olive oil. Add the roughly chopped half of the white onion, garlic, ginger, curry powder, thyme, and salt. Cook until the onions are soft and fragrant. 
- Add the chopped capsicum, tomatoes, and jalapenos to the pan. Cook until the tomatoes start to break down and the mixture becomes saucy, about 5-7 minutes. 
- Add the tomato paste and stir well to combine. Cook for another 2-3 minutes. 
- Transfer the cooked mixture to a blender or use an immersion blender to blend until smooth. Add 1/4 cup of water to help blend if necessary. 
- Return the blended sauce to the pan. Add the remaining sliced onions and cook for another 2-3 minutes. 
- Add the rice and stir to coat the rice with the sauce. 
- Pour in the stock and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for about 20-25 minutes, or until the rice is cooked and the liquid is absorbed. Stir occasionally to prevent sticking. 
- Once the rice is cooked, stir in the cooked beef slices. Let it cook for another 2-3 minutes to ensure the beef is heated through. 
- Adjust seasoning with salt and pepper if needed, and serve.
