Dry rubs lock in big flavour and create a delicious crust without the extra fuss.

INGREDIENTS

  • 300g raw chicken breast

  • 2 tsp olive oil

  • Juice of one lime

Spice Mix:

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ¾ tsp dried oregano

  • ¾ tsp allspice

  • ½ tsp ground ginger

  • ½ tsp paprika

  • ½ tsp cinnamon

  • ½ tsp nutmeg

  • 1 tsp brown sugar

  • 1/2 tsp salt

  • 1/2 tsp cayenne pepper

  • ¼ tsp black pepper

METHOD

  1. Slice the chicken breast lengthways through the center to create two even pieces and pat dry with a paper towel.

  2. Mix together the spices, then rub the spice mix all over the chicken along with 1 tsp of oil and a squeeze of lime juice.

  3. Heat a non-stick pan over medium high heat and add the remaining oil. Cook the chicken for 3 to 4 minutes on each side, or until fully cooked.

  4. Serve with coconut rice and slaw, roasted kumara, or a flatbread with mango chutney for a complete meal.
