Jerk Chicken
Dry rubs lock in big flavour and create a delicious crust without the extra fuss.
INGREDIENTS
300g raw chicken breast
2 tsp olive oil
Juice of one lime
Spice Mix:
1 tsp garlic powder
1 tsp onion powder
¾ tsp dried oregano
¾ tsp allspice
½ tsp ground ginger
½ tsp paprika
½ tsp cinnamon
½ tsp nutmeg
1 tsp brown sugar
1/2 tsp salt
1/2 tsp cayenne pepper
¼ tsp black pepper
METHOD
Slice the chicken breast lengthways through the center to create two even pieces and pat dry with a paper towel.
Mix together the spices, then rub the spice mix all over the chicken along with 1 tsp of oil and a squeeze of lime juice.
Heat a non-stick pan over medium high heat and add the remaining oil. Cook the chicken for 3 to 4 minutes on each side, or until fully cooked.
Serve with coconut rice and slaw, roasted kumara, or a flatbread with mango chutney for a complete meal.
