Tekka Don - Marinated Tuna Rice Bowl

We are eating good this week!

Thanks to our client Jeremy for bringing in some of his catch.

We are going to highlight this amazing blue fin tuna with the trinity of Japanese flavours.

INGREDIENTS

  • 300g fresh tuna

  • 300g cooked Japanese short grain rice

  • 3 Tbsp soy sauce

  • 1 Tbsp sake

  • 1 Tbsp mirin

  • 2.5g dash stock powder

  • 2 tsp sesame oil

  • 2 Tbsp furikake

  • 1 sprinkle onion thinly sliced

METHOD

  1. Mix soy sauce, sake, mirin, and dash powder into a saucepan. Place over medium-high heat and bring to a boil. Immediately remove from the heat, add the sesame oil and allow to cool.

  2. Cook rice as per packet instructions. Try getting a Japanese short grain rice (used for sushi) - trust me it makes all the difference.

  3. Thinly slice the fresh tuna (ensure you are using sashimi/sushi grade fish since we are eating it raw. You can ask your fishmonger whether the fish is ok to eat raw). Place the sliced fish into a bowl and pour over the cooled soy mixture. Place in the fridge for 10-30mins.

  4. To serve, portion out the rice into bowls (make sure it’s nice and hot). Top with the sliced tuna and the leftover sauce. Sprinkle on the furikake and garnish with spring onion.
