Chicken & Hummus
Fire up the grill and let BBQ season begin! This marinade pairs nicely with many of our other recipes.
INGREDIENTS
- 200g Lisa’s Kumara Hummus with coconut & turmeric 
- ¼ red onion, sliced 
- ½ cucumber, cubed 
- ½ capsicum, cubed 
- 2 tomatoes, diced 
- Juice of half a lemon 
- ½ bunch parsley, diced 
- 300g chicken breast, cut into 3cm cubes 
Marinade:
- ¼ cup light milk 
- 2 Tbsp pickle juice 
- 2 tsp smoked paprika 
- 1 tsp garam masala 
- 1 tsp coriander 
- 1 tsp mixed herbs 
- Salt and pepper 
METHOD
- Mix marinade together and add cubed chicken. Set aside in the fridge for at least 20 minutes, ideally overnight. 
- Pre-heat BBQ. Add the cubed chicken to skewers and cook for 5-7 minutes per side or until the chicken is cooked through. 
- While the chicken is cooking, toss the salad ingredients (onion, cucumber, capsicum and tomato) together in a bowl. Add lemon juice, then salt and pepper to taste. 
- To assemble, divide the hummus between two plates making a well in the centre of each. Pile the salad in the middle and top with the barbequed chicken.
