Blueberry Fritter

Because flour and yoghurt make a great bread base.

You can put the protein powder into the dough, however in testing I found it dried out the mixture more. I option for the protein as a glaze/dipping sauce for when the fritters are cooked.

Recipe below is for 1 fritter, you can scale up as necessary, but I do find they are best eaten fresh.

INGREDIENTS:

  • 60g flour

  • 50g vanilla flavoured protein yoghurt

  • ¼ tsp baking powder

  • pinch of salt

  • 40g berries

  • 30g whey protein

  • 1 tbsp sugar free maple syrup

  • 7mls olive oil

  • 8g icing sugar

  • 5-10mls milk

METHOD

  1. Pre heat the oven to 180 degrees celsius.

  2. In a mixing bowl, add the flour, baking powder, and salt and give a mix.

  3. Add the yoghurt and stir with a spoon or spatula to combine. Give a quick mix with your hands to ensure everything is combined. Set aside to rest.

  4. In a seperate bowl add the protein powder, maple syrup, and a splash of cold water and mix. Keep adding a tbsp of water while mixing until desired consistency is reached. It should be thick but still able to run off the spoon.

  5. Place berries in a microwave proof dish and heat in the microwave for 30 seconds. Once heated, roughly squash with a fork to release the juices.

  6. Add the blueberry juice to the protein mix, stir to combine and place in the fridge for later.

  7. Lightly dust the dough with a sprinkle of flour then press out into a flat sheet. Add the blueberry mixture on top and fold into a parcel.

  8. Spray a lined baking dish with oil. Then place the dough into the baking tray and give the top of the dough a spray with oil. Place into the oven to cook for 20mins.

  9. Once cooked, remove from the oven and place a pan oven medium heat. Add the oil to the pan and lightly fry the dough on the under cooked side for 2-3 minutes. Flip and cook for a further 1-2 minutes. Remove from the pan and let it cool before icing.

  10. For the icing, in a small bowl combine the icing sugar with half a cap of milk. Dunk the top of the fritter into the icing sugar and let it rest for 5minutes.

  11. Remove the protein mixture from the fridge, and drizzle over the top of the fritters right before eating. Use the rest of the protein mixture as a dipping sauce.
